It took me almost three days to perfect the sauce, but I have finally found an easy one pan method without meat or special ingredients. This sauce is wicked good. I used broccoli as my veg but really you could easily add tofu, faux meat, or other veggies

Broccoli in Spicy Peanut Sauce

1/2 c. peanut butter
1/4 c. soy sauce
1/4 c. vinegar (white or rice)
1 1/2 c. diced green onion
7 cloves of garlic minced
1 small lime (the juice)
Diced Habanero or Siracha to taste
3/4 c. water

2 lbs broccoli, and whatever else you think should go in it.

The broccoli really can be anything you like. While I was trying to get the sauce right I used a variety of things: 3 heads of fresh broccoli with coins made from the stems, Frozen florets and carrot rounds, and julienne coleslaw style broccoli all were great.

1) Combine soy sauce, onions, garlic, and vinegar in a cold pan turn up to medium high
2) As the pan heats add all ingredients except the broccoli, stir into presentable sauce
3) Add broccoli and simmer until broccoli is cooked /warm.

There are many ways to serve this. It works well served over rice garnished with chopped green onions. It can also be laid over some shredded kale on a tortilla. Both of these options pack well for lunch the next day.
