I call this cake wow cake because it seems like something this easy shouldn’t be this good. I make it for birthdays, potlucks, or surprise bake sales. It comes out super pretty and needs no frosting.
1 16oz can sliced pineapple
1/3 cup vegetable oil
1 cup shredded coconut
1) Mix juice from pineapples, oil and coconut together with mix. It should be a runny batter consistency. If it is doughy just add a little water.
2) Arrange pineapple slices on the bottom of a greased pan like a pineapple upside down cake. Then pour batter over them. For cupcakes, pour batter into the cups first and put the slices on top.
3) Bake according to mix directions. (probably 425 for 25ish minutes) Check to see if it is done by pricking with a toothpick. If it comes out clean serve.
4) A nice way to serve the cake is to turn it over onto a plate so the pineapples face up. Then sprinkle it with a little coconut. For cupcakes just sprinkle coconut. Viola!
