So, like, I tried to come up with a clever name for this sandwich for like 45 minutes. Which is longer than it took to make, photograph, and eat put together. This is why you get no clever puns about fried cheese bacon. That beautiful bacon up there? Yeah, that’s cheese. Let’s get going.

This is the 1st sourdough I made with out flying crust, or rise issues, or weird lumps, or burning. Hats off to everyone who got this right quickly, #sourdoughishard

Ingredients:

  • 1/2 c. grated cheese(any kind that melts well, I used a Mexican style blend)
  • Smoked Paprika or similar smoky spice
  • 2 pieces of bread
  • Mayo
  • 1/2 a tomato
  • 1 leaf lettuce

Instructions: 

  1. Heat a well seasoned or non-stick pan to medium.
  2. Arrange the cheese into bacon-ish shapes in the pan.

  3. Sprinkle with smoked paprika or similar, I used a smokey chipotle and regular paprika because I was out.
  4. Fry until pretty solid on the bottom and flip.

  5. Slice up your vegetables and sandwichify!
